How can I set CentOS 7 to install bootloader as hybrid Legacy / EFI?

I've got a situation where a system has booted to EFI PXE, installs CentOS, and then is swapped to Legacy booting mode.

How can I tell the CentOS 7.4 installer to set up a hybrid boot such that the installation will boot from either EFI or Legacy?

Alternatively: Where in the CentOS installer is GRUB called? I figured I would just read the source, but that doesn't appear to be immediately available.
