The loop cut I make basically creates a plain outside the mesh.

So I was doing a tutorial, as you do, making an anvil. I removed a piece from the mesh using boolean. Then after making the loop cut to smooth out the edge, I found that the bottom portion of the loop went outside the mesh, as opposed to Guru's version in the tutorial (and apparently everyone else's in the comment section) instead of following the circular edge. I restarted from scratch making sure I don't push anything wrong and it still won't stay inside.

What am I missing? Could you please enlighten me?
